1.5 cups raw cashews
1.5 cup dates (pitted and roughly chopped)
0.5 cup almond butter
0.5 cup maple syrup
0.5 cup coconut flour
0.5 cup unsweetened shredded coconut
0.5 teaspoon almond extract
1.5 cups dark chocolate chips
1.5 tablespoons coconut oil
Blend cashews in food processor until finely chopped. Mix in with dry ingredients in a bowl.
add roughly chopped dates, maple syrup, almond extract and coconut oil and stir.
Line baking tray with baking paper. Add wet mixture into tray and leave to set in freezer for 1 hour. Melt dark chocolate gradually in microwave and add 1 Tbs of boiling water. Spread evenly over slice and put the slice back in the freezer. Top with coconut.
